Jennie’s cornbread recipe:
Before you start, you will need one 8x8 pan or a 9” round/square pan if you are using an oven
Or you can use a 9 x 13” pan on a barbeque
Ingredients:
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1/4 cup granulated sugar
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- Optional: seasoning like summer savoury, paprika, black pepper, or chilli powder, garlic powder
- 1 container of plain yogurt, 1% works well
- 2 large eggs, beaten
Instructions:
- Predate oven to 400
- Whisk all dry ingredients together in one large bowl
- Stir in yogurt and eggs until just combined
- Sprinkle additional desired seasoning on top (sea salt is nice)
- Bake 20 to 25 minutes until golden brown on top and the toothpick comes out clean when inserted
