Jennie’s cornbread recipe: 

Before you start, you will need one 8x8 pan or a 9” round/square pan if you are using an oven 
Or you can use a 9 x 13” pan on a barbeque 

Ingredients: 

 

  • 1 cup all-purpose flour 
  • 1 cup cornmeal 
  • 1/4 cup granulated sugar 
  • 1 teaspoon baking soda 
  • 3/4 teaspoon salt 
  • Optional: seasoning like summer savoury, paprika, black pepper, or chilli powder, garlic powder 
  • 1 container of plain yogurt, 1% works well 
  • 2 large eggs, beaten 

Instructions: 

  • Predate oven to 400 
  • Whisk all dry ingredients together in one large bowl 
  • Stir in yogurt and eggs until just combined 
  • Sprinkle additional desired seasoning on top (sea salt is nice)
  • Bake 20 to 25 minutes until golden brown on top and the toothpick comes out clean when inserted
